“Initium,” Latin for “beginning,” presents a festive course perfect for the New Year. Featuring nutrient-rich Agu pork, locally sourced tuna, Kumejima tiger prawns, and other regional ingredients, the menu also incorporates traditional Okinawan New Year foods such as taro for good fortune. The fish course is simmered in a dashi broth made from kelp and shiitake mushrooms, while the meat course pairs Wagyu filet with shoyu-koji, offering a gentle, flavorful Japanese-inspired touch to start the year.
